Cúng tất niên một nghi thức đánh dấu sự kết thúc của một năm cũ và chuẩn bị bước sang một năm mới. Đây là nét đẹp văn hóa truyền thống của người Việt Nam. Lễ tất niên thường sẽ được tiến hành vào ngày 30 Tết theo lịch âm. Vào ngày này, mọi người sẽ chuẩn bị lễ cúng, đọc các bài cúng tất niên, cầu mong những điều tốt đẹp cho năm mới.
Vào ngày này, mỗi gia đình đều chuẩn bị một mâm cơm tươm tất để dâng lên ông bà tổ tiên, tiễn năm cũ và đón năm mới, các thành viên gặp mặt để tổng kết lại kết quả của năm đã làm được và chưa làm được mục tiêu năm mới, chờ đón khoảnh khắc giao thừa. Mâm cúng tất niên đơn giản nhưng vẫn đầy đủ với ý nghĩa tổng kết năm cũ và mong cầu năm mới thịnh vượng.
Tùy theo điều kiện tùng gia đình, mâm cúng tất niên bao gồm: mâm ngũ quả, hương hoa, giấy tiền vàng mã, đèn nến, hoa tươi, trầu cau, chè, thuốc, nước lọc (trà), rượu, bánh chưng và mâm cỗ thức ăn (chay hoặc mặn tùy đặc thù từng gia chủ).
Mâm ngũ quả, hương hoa thường được đặt trên ban thờ và sẽ thờ suốt Tết. Mâm cỗ mặn được đặt ở bàn thờ phụ hoặc một chiếc bàn nhỏ chữ nhật thấp hơn đặt trước bàn thờ chính.
Mâm ngũ quả nên chọn các loại hoa quả thông dụng, ăn được, tươi ngon, đẹp mắt và phải là hoa quả vừa đủ chín. Gia chủ có thể chọn chuối, bưởi, dưa hấu, cam, quýt, phật thủ, táo, lê, thanh long đỏ… Gia chủ không nên dùng quả xanh, quả không ăn được, quả giả để cúng gia tiên. Hoa bày bàn thờ nên có một cành đào nhỏ.
Đối với người miền Bắc, mâm cỗ mặn được chuẩn bị rất bài bản, thường trên mâm có 6 bát, 6 đĩa hoặc 8 bát, 8 đĩa… thậm chí, có nhà chuẩn bị mâm cỗ lớn xếp cao từ 2 đến 3 tầng. Mâm cúng tất niên thông thường không thể thiếu được món gà trống, ngoài ra còn được bày biện trang nghiêm với các món như: canh măng, canh mọc, gà luộc, nem rán, rau, giò, bánh chưng…
Mâm cúng tất niên miền Trung ít cầu kỳ hơn, thường có: bánh chưng, bánh tét, giò lụa, gà bóp rau răm, thịt heo luộc, giá chua…
Trong khi đó, mâm cúng tất niên của người miền Nam thường có: bánh tét, canh măng, thịt kho tàu, chả giò, nem, gỏi tôm thịt…
Có thể thấy, mâm cúng tất niên mang ý nghĩa tinh thần rất lớn. Vì vậy, gia chủ cần chú ý luôn sử dụng hoa tươi và cắt tỉa gọn gàng, lau mâm cúng thật sạch sẽ trước khi bày đồ ăn lên.
Bài cúng tất niên không cần quá cầu kỳ, chủ yếu là thể hiện tấm lòng của người cúng để tỏ lòng biết ơn đất trời, thần linh đã phù hộ cho gia đình trong suốt một năm qua.
